Welcome. Interesting that you'd post Forest River product issues on a Keystone site. Since RVs are all assembled with many of the same components, you might get a few responses if you can elaborate on your "problems". I'm pretty sure your AC issue isn't related to your water temp issue.

The community is here to help if you provide a few more details.

There is a current thread on a.c. issues, seems the consensus is thermostat or circuit board in the a.c.. As far as hot water, how long are you waiting and are you using propane or electric or both?

Hot water issue could be the bypass valve in the wrong position.
AC, maybe the thermostat?

One more thing to check for the water issue lies in the out door shower. If you have a outside shower be sure the water is off at the faucet and not on the head.

Your AC and water issues are unrelated. The AC ducts and grills are probably not taped off correctly and instead of blowing cold air into the interior, you are cooling the ceiling and the room temperature is not going down to the set point.

If your water heater has only one valve for winterizing, then you have a one way valve on the hot water output that is stuck. It would be attached directly to the hot water output and would look like a pipe nipple. I removed mine and replumbed using a second valve.
