Cabinet makeover

We have a 2015 Laredo 29RKS and wanted to know if anyone else did this modification. The cabinet that forms the "Island" has 2 drawers that are shallow and a storage space on the backside that can only be accessed by moving the recliner to get to it. We were thinking of making a cart with shelves that would roll out on wheels that would use ALL of the space and eliminate the wasted space. Would probably put some type of rail to keep the cart from moving side to side and latches on the front to keep in place when going down the road. If you did this or something similar could you please post pics and any helpful advise. Storage is at a premium and the pantry cabinet is useless because you cannot open the doors all the way because of the slide so this mod would make a huge difference! Thanks
