When I used that same grill, I wanted to do the same thing. My thinking was to cut out that round stop bar, and just drill another set of holes for the pin once it swung 180 degrees. I never got to it, as I got tired of going to the rear of the camper to do burgers. The rear was always on the other side of the concrete tire stop, where the ground was least desirable. I re-plumbed the quick connect to use the outdoor kitchen quick connect, and just put the grill on a table. I've since upgraded to a 28" Blackstone griddle that is plumbed for the outdoor kitchen quick connect. I don't use the grill any longer - don't even take it with me on trips now.
