I ended up using battery powered with USB charging. A thin metal plate is stuck to the wall and the light is magnetic so it attaches easy to the plate and it comes off really easy for charging. My pantry is really big and deep, so I put one to light up each shelf (3).
I'm thinking about picking up another set for other areas.
