The ball height and WD setup is a compromise to attempt to get the correct weight distribution with the trailer level. Usually, you will configure the hitch with the ball at a specific height as a starting point, but then dial the configuration in using the WD hitch installation/setup instructions.

If your truck is drooping too much in the rear, I would suggest going through the WD setup instructions and make sure you're within the limits outlined by the hitch manufacturer.

I would also have a second look at the weight limits on the truck and make sure you're not exceeding those (GVWR, GCWR, GAWR (front/rear), Payload, etc.).
