My Truxedo rolls right over the hitch with a couple inches to spare. It's a soft type and offers really no security other than getting things in the bed completely out of sight. I've been running a similar cover on various trucks for the last 12+ years with zero issues of theft or vandalism. I think it really proves the old saying that thieves won't break in for something unless they can see it. I'm sure there are exceptions but getting stuff out of view will cut down on problems.
