In addition to Steve's advice, one comment I'd suggest: Don't close a "flowing black tank valve". Doing so will increase the chances of catching foreign material in the valve blade seat. That "little bit of tissue" or other foreign material can cause the valve blade to not seat fully which will cause your valve to leak, filling your "capped area" with black water, setting you up for a dirty surprise the next time you remove the terminal cap.

My "general rule of thumb" is to never close the black tank valve when liquid is flowing out of the tank.

You should have two gray tank valves and one black tank valve. With a clear adapter you can easily tell which valve is which on the first dump. No matter which you pull first, you'll still have the "other gray tank" to flush the sewer hose after the tanks controlled by those "two handles close to each other" are empty.
