Our plans for this winter include reupholstering the dinette cushions, updating the window valences to match the new color scheme (to include the fabric around the door and dinette) and adding some backsplash in the kitchen and bathroom.

Long term we want to rip out the dinette and replace it with a smaller eating area with a desk and bookshelf, or build a custom love seat with fold down table. We rarely entertain inside our home, and with just the two of us (and our pets) unless we're on the bed, we can't really sit together. Adding a custom loveseat would give us that option.

Outside the rig I have added a 2nd spare tire holder, a couple sewer hose holders, and upgraded from one 12v battery to a bank of four 6v golf cart batteries mounted in a metal box on the tongue. It's a lot of extra weight, but we love the extra hours of power, which are especially nice when running the furnace overnight on chilly Alaskan adventures.
