We both grew up just north of Amarillo in Dumas & my recommendation for Palo Duro Canyon would be late summer/early fall as in the spring the weather can be a bit on the stormy side. From experience you don't want to be in the canyon during/after a heavy spring rain without a boat or an rv that floats. It is beautiful though & 2nd only to the Grand Canyon.
