Harley, the Gulf is very cold in the winter. Shallow water = cold water in the winter. The Gulf side out of Fort Myers is normally in the 66 degree area whereas Miami is normally in the 75 degree range in February. Keep in mind that if you head to south Texas in the South Padre Island area you will not find beaches like you are expecting. These are very gravelly and shallow for a long way out from shore. On the positive side you can drive on the beach.
