Another option

I bought a used 2012 Passport Ultra Lite that came with what I think was the Aussie grill and a mount under the dinette window. Tried to use it once after doing the bread test to check for even heat....

I would recommend either a Pit Barrel Smoker (been using mine for 7 years and love it for slow smoking) or a Weber Kettle with a Slow n Sear from ABC Barbecue. Both are light enough to load by myself...
