We solved this problem for our previous bumper-pull trailer by getting a longer drop shank for the trailer hitch. This allowed the tailgate to be opened fully while the trailer was hitched up.

Yes, it's the blue wires. Shorting them together is equivalent to the thermostat asking for heat. You can access the wires in the outside area near the back of the fridge.

To answer your other question, you should never place the jack under the axle tube itself. They are not very strong and can easily be bent. I would stay under the u-bolts.
